Friends Chilling and Grilling.






I love the idea of friends getting together, cooking, chilling out with a good bottle of wine and eating. The best part of it, some of us just met for the first time, and that's what food can do for ya, bringing flavors and friends together. I had a fun bunch of foodies at my home this afternoon, learning to cook some yogurt curry chicken, mint and mango chutney and not forgetting a simple basil coconut ice-cream...something you might contemplate taking a bath in, because it's so refreshing. Basil and Chocolate what a happy marriage...its a matrimony made in dessert heaven. To make it even more dreamy, I garnished it with toasted coconut and finished it off with some lemon rinds.
Here is this heavenly gift:

Basil Chocolate Ice-Cream with toasted coconut

1 quart Chocolate Ice-Cream, Häagen-Dazs
10 Basil leaves, chopped
1 cup toasted coconut for garnish
1 lemon rind, for garnish

Thaw ice-cream at room tempature so it’s easy to handle, scoop and mix in the blender. Chop basil in blender. Scoop all ice-cream from tub and give it a good blend with the basil in the blender.

Pour it back into tub and back into the freezer to harden just like an ice-cream in the tub.

When serving, garnish with toasted coconut and lemon rind. Enjoy.

Everything was so good and I had so much fun. I'm making this meal for my husband and my sister tonight so wish me luck! I pre-made the ice cream last night so I "tested" some at lunch today. Perfect!
