Rainy Day Comfort.
For some of us its grill cheese and for some a good sizzling plate of tofu asparagus with a good splash of oyster sauce and nice hint of shitake mushrooms. Yes, and that's my comfort food with all the right TLC : )
It rained so heavy this evening that my swimming or walking got interrupted. Cooking was something I could do. I was graving a healthy tofu dish. Takes me back to mom's tofu dishes. Simple and delicious.
Here is this very simple Oyster Sauce Tofu with Asparagus and Shitake Mushrooms.
1 packet of firm tofu. Cube and set them aside.
Cut fresh asparagus. About 15 stems.
Slice about 5 shitake mushrooms (I use dried shitakes. So, I soaked them in about 1/2 cup of warm water for 20 to 30 minutes until they become soft. Keep the water the mushroom was soaking in as liquid/water for cooking.)
1 tsp of chopped garlic
1 tsp minced ginger
1 tbsp vegetable oil
2 tbsp Oyster Sauce (Lee Kum Kee Brand)
1 tsp sesame oil
Black pepper to taste
Heat oil in a small wok or a medium size pan. Keep the heat medium. When oil is hot, throw in garlic and ginger and saute till it becomes aromatic. The garlic will start becoming golden brown and that's when you throw in the cubed tofu. Make sure the heat is always on medium. Slowly using a wooden spoon, stir tofu with garlic and ginger. Coating tofu well with the mixture.
After about 7 minutes, put in oyster sauce, asparagus and shitake mushrooms along with water. Gently stir and close pan or wok with a lid. Let it simmer for about 15 minutes. Just before turning off heat, add sesame oil and stir gently. Remove from heat and serve with steam white or brown rice.
