Naan made easy.
So, today was my come back class after a very long break. It was lovely and I must say it was rather sweet and relaxing.
I had a small intimate class...just the right day to teach 4 very enthusiastic curry fanatics. I love sharing about my culture as much as I love learning about another. And what more than starting with food we all grew up with. Yes...I love food as much as Karl Lagerfeld loves fashion or Julia Child loves butter.
Today I thought, how to make simple homemade Roti (bread) Naan. Of course we did not bake it in a tandoor (clay oven) but instead we grilled in on a grill plate...like I said...simple, flavorful and homemade...but not semi-homemade like Sandra Lea ; )...just kidding. To accompany our roti, we learned to make Mustard Seeds Chickpea curry with Fresh Dill leaves. I know...sounds complicating, but actually very simple. Since I'm a minimalist, I like simple.
We had a wonderful time. We had a great bottle of Pinot Grigio to compliment our spices. Very nice contrast to the great significant flavors of the mustard seeds and dill leaves to the mild spicy curry dish. I even had 2 glasses of wine. Yes...Suba drinking in the afternoon? Very unusual but I think seeing "Julie and Julia" has influenced my style of cooking : )
Anyways...what's next. Due to popular demand, I have been asked to teach my famous Shrimp and Pork dumplings. You will learn to make the filling and not to mention my own ginger dipping sauce, and most of all, learn to fold the dumplings too. Yes you can now eat your own all-you-can-eat homemade dumplings. To accompany that a great Lemon Grass Julep. A fantastic exotic cocktail.
