Confession

This is crazy but I have a confession to make. I have never baked a cake or made a cup cake in my life. So, if i died tomorrow, my eulogy will read..."she was a good cook but never a good baker". Hmmm, not good and i was not going to let that happen : )

As most of you know...cooking is my passion but baking is a whole different category. yes, I have bake fish, baked quiche ....but never a cake.
So, the day before Valentine's I decided to fulfil one of new year's resolution (to bake a cake), I baked a simple carrot cake and had enough batter to split into 12 cup cakes. It of course was store bought mix but at least I tried it, but I'm proud to say, I made the cream cheese icing from scratch. I wasn't willing to cheat all the way. They were both delicious and moist. Ate one cupcake and gave everything else to friends but had absolute fun making the swirls and toppings.
I'm now, baking almost every weekend and next is to bake a cake from scratch. Not good for my waist but good for my baking fears. And the house smells good on the weekends too.
