Comfort Food.
I like simple ways of cooking. It's the best kind of comfort food. The aroma of spices stay in your kitchen for a few days and that's so comforting. It reminds me of my heritage and humbles my soul.
So, last Sunday we cooked with curry, coconut milk, saffron, kaffir leaves, cumin and rambutans. It's all delights from my home land. We Asians love spices. Especially being an Malaysian Indian myself...spices are staples in our daily pantry...thus we cooked up a rice dish with lot's of saffron and cumin seeds. It's a dish by itself, but we accompanied our rice dish with a creamy coconut chicken with kaffir leaves (lime leaves). I love spices but i'm not a huge fan of hot dishes so we had to cut down on the heat. I like to taste my food and savor the flavors and not burn a hold in my stomach (remember students you can always add more heat to your dish by increasing on the amount of curry powder).
To top the afternoon my best friend Michael Ong thought us a simple drink with rambutan and lychee fruits with mint and splashes of vodka for those who wanted to kick it up a little. What a great choice to wash down the spices on a summer afternoon. Very refreshing and yummy.
For my next class i'm going to teach 3 simple dishes that will impress your family and friends. It's so simple, easy and quick to fix.
About a few weeks ago, i invited a few girl friends to my house for a chick-flick night. I fixed a few simple dishes and everyone went crazy asking me for the recipes. I told them, how easy it is and it's from a jar of peanut sauce. So, i'm going to teach you ways you can fix some awesome dishes with my favorite Thai Kitchen Satay Sauce.

3. Green Tea Soba noodles with Sesame dressing and Peanut Sauce
