Spices in the air





There was so much spices in the air, at yesterday's cooking class that even helped clear some sinus sufferers. I love chicken vindaloo. It's one of my favorite dishes...when of course it not cook too spicy. Ever since my move to the US, I have got whimper with how spicy I can handle : ) My mother use to cook it for Diwali (Hindu New year). It's her specialty and she learned it from her mom. It's a very unusual dish...a great combination of hot spicy and sweet. This dish is cooked very differently in many Indian homes but this is how mom cooks it. It's actually a dish that was introduced to the Indians by the Portuguese. My students enjoyed the mango chutney too. How easy was that? Now you can make it yourself and not eat it from a jar. Remember to discard the spices if you want to chill it for a week. We even learned a simple cilantro-mint puree/pesto which works awesome with grilled shrimp, lamp or chicken.
